Rice With Pine Nuts, wheat-free gluten-free lactose-free
2 Tablespoons butter
1 cup uncooked white rice
6 medium chopped green onions
1/2 cup pine nuts
21/2 cups chicken broth
1 teaspoon grated lemon peel
1/4 teaspoon salt
- Melt butter, Brown rice and nuts and 1/2 the onions or until nuts brown.
- Stir in broth, peel, and salt.
- Heat to boil, reduce, cover and cook 20 minutes.
- Sprinkle with remaining green onions.
